I think there's a little confusion here:

bluez-gnome [currently in the debian archive] is the gnome "interface" for
managing bluez/bluetooth-related stuff

gnome-bluetooth [currently NOT in the archive but semi-working packages present
in pkg-bluetooth svn repository] is the bluetooth integration with the gnome
desktop environment
