I've made some tests, but am a little bit restricted by my company's admin. If I send myself an e-mail with an empty subject from Evolution, then it doesn't crash. If I connect to port 25 of Exchange server via telnet and send myself an e-mail coming from my address, then Evolution crashes (in that case, the "From" field is only composed of an address, no full name in it). If I connect to port 25 of Exchange server via telnet and send myself an e-mail coming from a fake address, then Evolution crashes. Sorry not being able to help you more. The problem happened a few times since I submitted the bug report.
