Hm, I tried this with my own setup (auctex 11.83-1bpo1, either emacs21 21.4a-1 from sarge or a backport of emacs-snapshot) with my complete ~/.emacs (including (global-font-lock-mode t nil (font-lock))), and I do not get a freeze. It would be great if you could install auctex from backports.org and try with that. Note that it replaces preview-latex, which is now included in auctex.
