No, you missed the point of the xpdf package. xpdf is divided into xpdf-reader and xpdf-utils. If you want just the reader, just install xpdf-reader (/usr/bin/xpdf). If you want just the utils, just install xpdf-utils. If you want both, you may install xpdf. If you remove xpdf-utils using your command above, you will still have xpdf-reader, which is what you wanted.
