I think we should split it into a texlive-doc-en-base package that contains all the basic stuff (catalogue, UKTUG faq, latex2e-html, mathmode, firststeps, impatient, l2tabuen, lshort, tds, tex-refs, wp-conv) and leave the special stuff (knuth, web/graphics companion, tlc2, tamethebeast, maketexwork, *font*, components, dtxtut, meta*, pstricks, webguide, truetype) to a texlive-doc-en-extra package. I'm unsure about gentle guide-to-latex help math-into-latex Moreover, it seems suboptimal to me that the package installs symlinks for each file from /usr/share/texlive-doc/english/somedir to the individual files below /usr/share/texlive-doc-en/english.
