The latest version of sensors-applet (1.7.5) will automatically calculate the layout of sensors based upon the size of your panel. If you want sensors on two lines you will need to ensure the panel is big enough to fit them in, and sensors-applet will automatically lay them out this way.
I think Sam will be adding the newest version to Debian testing soon.
