I've probably overlooked the manual page for pppoe-server(8). Just saw that there is "-N" option, which does exactly that - defines the maximum number of concurrent sessions, or if omitted - defaults to the value of 64 (DEFAULT_MAX_SESSIONS in pppoe-server.h).
