GNOME 48's default font is now "Adwaita Sans", a variant of the
variable version of fonts-inter. This hasn't been packaged for Debian
yet.

GNOME upstream only builds the variable version of Cantarell. I think
we could try doing that but we have to be cautious about how it
affects upgrades for people who are logged into GNOME. See
https://bugs.debian.org/788791

Even if you did build both, I believe there is no need to have
Conflicts/Breaks/Replaces and that can cause complications.
