Having created a tarball using mmdebstrap, and configured sbuild to use it with unshare backend, sbuild works well, but sbuild-shell unstable # whoami sbuild and nothing of interest can be changed from there, since that user doesn't have permissions. This problem has not appeared recently, but it's not documented, as far as I could search for it.
