When I: $ apt install gir1.2-webkit2-4.0:amd64=2.38.5-1~deb11u1 libwebkit2gtk- 4.0-37:amd64=2.38.5-1~deb11u1 gir1.2-javascriptcoregtk- 4.0:amd64=2.38.5-1~deb11u1 libjavascriptcoregtk-4.0-18:amd64=2.38.5- 1~deb11u1 and restart evolution the problem goes away. I think something in the update breaks something important in evolution's rendering of mail.
