Followup: Doing grub-install if the partition you install to isn't mounted at /boot produces a nonworking image. https://www.dropbox.com/s/74grf6t3hy5lp9t/disk%20diff.png?dl=0 is the diff of the first few hundred lines of output from hexdump of a disk image that booted (because it was at /boot) and didn't.
