evince windows do not have a proper icon in a KDE Wayland session. This is caused by the fact that the 'desktopFileName' of the Wayland surface is set to 'evince', when it should be 'org.gnome.Evince'. There is no `evince.desktop` so KDE cannot find an icon. Other gnome applications have the expected 'desktopFileName' (I checked the calculator), so this seems to be something specific to evince. I also reported this upstream at <https://gitlab.gnome.org/GNOME/evince/-/issues/1873>; it is hard to tell where the issue originates.
