On a hunch, I ensured libpoppler was up-to-date - an apt-get upgrade libpoppler* corrected the problem and I am now able to import PDFs again.
Please feel free to close the bug. I'm not sure whether this breakage is an indication that a dependency isn't properly tracked; I'll leave that up to you.
