The procedure for installing debug packages is explained on this wiki

You can either configure automatic loading of debug symbols, or
manually add the repository for debug packages to your sources.list.

The debug packages for octave (in bullseye) are called: octave-dbgsym,
liboctave8-dbgsym, liboctave-dev-dbgsym

You may also want to install the debug packages for openblas:
libopenblas0-pthread-dbgsym (assuming you’re using the pthread flavour)
