the current version of midori still depends on the transitional package libgdk-pixbuf2.0-0 instead of libgdk-pixbuf-2.0-0. You might want to trigger a binNMU build to fix dependencies. Moreover, midori still recommends gnome-icon-theme instead of adwaita-icon-theme which is the default icon theme since GTK3. Maybe you want to change that too after the release of Debian 11.
