Without having looked too deeply into this, maybe you are running into https://github.com/ximion/appstream/pull/328 ? Could be fixed in time for bullseye if I manage to get a freeze exception for a whole batch of AppStream bugfixes (otherwise maybe cherry-picking changes like this is an option too).
