Release-critical bug fixes, especially low- risk ones, should always go to stable-updates.
Also just as a technicality, ACME v1 only no longer works for Let's Encrypt. Other certificate authorities to the best of my knowledge may choose to keep supporting ACME v1. In this way the package is not totally unusable.
