It's misnamed but "RPCNFSDCOUNT" in "/etc/default/nfs-kernel-server" can be used.
It might not be worth creating a more appropriate, separate variable given that, when Debian upgrades to v2.x (first released, as 2.1.1, three and a half years ago), options'll be set via "/etc/nfs.conf".
