whoops, thanks for making me aware of this!

Unfortunately, this is a bug in the documentation. The default variant should
be "debootstrap" or "-" because mmdebstrap is supposed to be a drop-in
replacement for debootstrap.

So instead of changing the default to match the documentation, I'm afraid I
will have to change the documentation to match the (correct) behaviour.

If you want a smaller rootfs, you will have to pass --variant=minbase as you
would with debootstrap.
