When I changed my GTK theme to Adwaita-Dark much of the UI text became unreadable. It appears that some UI elements are specified for particular colors while others are left with default values. This resulted in things like white text on white background, which was impossible to read. I may try to fix this myself, but I am not sure when I may find time.
