I've now finally managed to try the udeb in an installer build using
a locally built kernel-crypto-module udeb. The udeb version of
cryptsetup seems to be working well (I managed to setup and tear down
encrypted partitions).
I can't vouch for the dependencies being correct, but I assume that they
should be considering that the debian-installer build process managed to
figure out the extra libs that cryptsetup needed.
Now we need the three libs udeb'ified as well :)
