After testing this new configuration (and retesting after removing my
temporary apparmor force-complain symlink) msmtp seems to working for
both `pass` and the GNU stow symlink.

Right, Apparmor rules are applied to the final target of a symlink.
Depending on where you have that target file stored, it might make sense
to add it to the local override file (local/usr.bin.msmtp)?
