Ok, Denis gave me a "tip" that allowed me to find the problem (it was
indeed a config issue, though it's weird that xemacs and emacs react
differently).

I have some other problems with emacs and xkb, but I'll come back later
with those. It's almost impossible to make a Mac "fr" keymap that reacts
like in MacOS due to "Alt" beeing both "Alt" and used to generate
various symbols basically...

To reply to your other question:

I'm not a long time (x)emacs user, since I come from a MacOS background.
I started slowly with xemacs about 2 years ago because a co-worker of
mine was helping me getting up to speed with it and I wanted to get used
to something I could find easily on any linux box, instead of "jcc" that
I had been using on linux for a while before that which had the interest
of having the exact same key shortcuts as CodeWarrior (which I used for
years on MacOS), but became non-free.

I'm now wanting to switch to emacs because xemacs is slower, the "tabs"
stuff is totally buggy, and it's easier to find emacs than xemacs on an
existing install you are ssh'ing to :)
