Now I still don't know if the AppArmor profile for Thunderbird is
active.

You give only poor information how this behaviour could be reproduced.
Without this it's impossible to solve the issue on your side. Please
help me to understand what your are doing and what is happen on your
side.

Putting your small log information into the search engine of my choice
brings me to https://bugs.debian.org/cgi-bin/bugreport.cgi?bug=887645

So I would bet you have an active AA profile.

Next would be to see what AppArmor is blocking. For this the mentioned
Readme file is intended for.
