how did you check that Thunderbird is working online while you have enabled offline modus? Note the offline modus is only covering the sending and receiving of emails. I can't see any online activity except the noise of the google-calendar-plugin. You simply can see this if you start thunderbird from the CLI. The default setting about the offline mode which was selected while restarting Thunderbird is to not start in offline modus, you need to modify this if you prefer to start with the modus while Thunderbird was shutdown before.
