Debootstick version 2.0 is now in unstable and fixes the 2 issues you
noticed, among other changes.
So I will now close this issue.

I added a dirty "mkdir -p ./etc/init" to solve that issue, but then:
$ time sudo debootstick --config-root-password-ask debian-sid/
sid-vmfs-tools.iso
