"tagging" of Build-Depends are called "build profiles" and are to be
specified with DEB_BUILD_PROFILES. AFAIK mk-build-deps already has
support for build profiles.

You should build with both DEB_BUILD_OPTIONS and DEB_BUILD_PROFILES with
"nocheck" in them (they are both space-separated), they have different
porpuse and meaning, but sometimes (like this case) they are a tad
overlapped.
