The xfce4-display-settings way should work (it does here). Any other method is not relevant since Xfce has no way to know what you did. You might want to check if the configuration is properly saved in xfconf: xfconf-query -c displays -p /Default/HDMI1/Resolution 1920x1200 (assuming your HDMI output is called HDMI1, replace by the correct name).
