As a quick workaround you may want to redefine the function stop_fai_installation() to meet your local needs.
You can do this in any class/*.source file IIRC. If this is not working try /srv/fai/nfsroot/var/lib/fai/config/hooks/subroutines on the FAI uinstall server. If this file exists, it will be sourced in the very beginning (before mounting the config space).
