Since a week has passed and nobody talked me out of it, I've gone ahead and committed this change to partman-ufs Git: http://anonscm.debian.org/cgit/d-i/partman-ufs.git/commit/?id=c53452b736e73793faee3531269e9f3d744e4dc7 I still think it's something we really want to do - unjournalled UFS, without soft updates, has been reported in the past as a cause of slowness, and we also recently heard that slow disk I/O on the porterboxes is an inconvenience to Debian package maintainers.
