You are looking at the wrong place. xsessions belong to
/usr/share/xessions
and that's where I can find the MATE session on my laptop:
glaubitz@znote-t60l:~$ ls -l /usr/share/xsessions/

-rw-r--r-- 1 root root 6773 Mar 9 12:01 mate.desktop

The mate session file is located in the package "mate-session-manager":

It is currently not available in Debian unstable but only from
the MATE repositories [1] since it is still stuck in NEW [2]:
glaubitz@znote-t60l:~$ apt-cache policy mate-session-manager

Thus, you can either install MATE through the MATE repositories
from [1] or simply wait until MATE has been completely uploaded
to Debian unstable. Since MATE is a fully blown desktop which is
installed through a large number of packages, it takes some time
until all packages necessary for MATE are part of Debian and users
have to be patient and should refrain from reporting bugs.
