Hi Sebastien. The tethering feature - the ipheth driver is now in the mainline Linux kernel. In fact, if you are using the Gnome desktop which uses GVFS, the ipheth-utils package is not required. This package simply supplies a set of udev rules to kick off usbmuxd on which it depends.
The idea behind the package is that; supposing you installed a minimal Debian system, all you would need to get a network up and running via iPhone is to install ipheth-utils. This would be sufficient to bring up the network as soon as you plug your phone in. However, tools to do the equivalent already exist, and are part of modern desktop environments such as Gnome. Having said all that, have you tried getting the initial pairing done with the passcode disabled? See the following thread for more information: https://github.com/dgiagio/ipheth/issues/4 Another problem that I have is; the last iPhone I had was a 3GS, and this cannot run iOS 7.
