the S/MIME part of Icedove (Account Settings -> Security) doesn't
provide the menu entrys you describe. I think you are talking about
enigmail!?

I can disable temporarily the signing of my mail by using Crtl+Shift+S and
encrypting by Crtl+Shift+E for the mail I write.
Or you go manually to the menu OpenPGP and disable the single functions.
Or do I something missing?
