(Recording this information here for posterity.) Looking at dpkg(1) it appears that the environment variable DPKG_MAINTSCRIPT_ARCH will contain the appropriate string. Well, it contains amd64 when $(dpkg-architecture -qDEB_HOST_GNU_CPU) yield x86_64, but that can be worked around. The point is: it hold a representation of the architecture the binary being installed was built for.
