The mpg321(1) man page says:

  Basic keys:
    * or /   Increase or decrease volume.
    n        Skip song.
    m        Mute/unmute.

It should also say that they are enabled with the -K option (this
option is listed above in the man page, but as there are many options,
it is too easy not to notice it):

    * or /   Increase or decrease volume.
    n        Skip song.
    m        Mute/unmute.
