This exact line works perfectly for me.
(And AFAIK Ubuntu has openjdk-7 as the default and I haven't seen any
related bug reports there.)

So we have to find out what's the difference between our machines :)

This sounds like some missing parts of openjdk maybe?
 
Looking at the reportbug output ...

... I don't seen any openjdk-7 packages.

Which is a bit surprising since 2.10~beta1+ds-2 depends on
"openjdk-7-jre | java6-runtime"; I guess something als on your system
provides java6-runtime (candidates are default-jre, openjdk-6-jre,
openjdk-7-jre, sun-java6-jre) ...
[Hm, maybe there's a better way to express the dependency.]

Could you please run
    dpkg -l "openjdk*" | grep "^ii"
and paste the output?

Summary: someone had openjdk-6-jre-headless installed but not
openjdk-6-jre; I guess the problem might be the same with openjdk-7.
