gnome-icon-theme is really intended as a fallback, it's not really a usable theme imho. You should try with another icon theme like Tango (in any case, for icon names not in fd.o spec apps should bring their own but it's not always easy to design them so sometimes app developers use common names often shipped in large icon themes).
