I upgraded gstreamer0.10-0 to 0.10.36-1.2 and that seems to have fixed the problem I was experiencing (no crash, no UI, CPU spinning, gradual mallocing). On first invocation since installing gstreamer0.10-0 cheese started up, drew its UI, displayed the output of my webcam and then segfaulted. I didn't catch a core, and I didn't have debug symbols installed (I tried the packaged cheese rather than a rebuilt one with nostrip). On second invocation, it seems to be working fine.
