Ahh -- that's what I hadn't seen.  For what it's worth, something like
this in the documentation for -I would probably have been sufficient for
me:

  The default inode size may be affected by the usage type.  See the
  documentation for "-T" below.

and perhaps for completeness, in -t's documentation:

  Usage-type settings will override fs-type settings.  See the "-T"
  option below.

and finally, in -T's documentation:

  Usage-type settings will override fs-type settings.

or similar.
