PDFDocEncoding is a Latin-1 subset or UTF16BE with BOM. LilyPond correctly encodes this since version 2.13.61. Evince is wrong in expecting UTF-8 here according to the pdfmark specification. Neither xpdf nor pdfinfo have a problem.
