It seems the fault was not with libtiff-tools. After further investigation it turned out that I had forgotten to include a name for the target file. Instead of "tiffcp CIMG8*.tif target.tif" I had first just typed "tiffcp CIMG8*.tif" which led to all images but the last matching one to end up in that last file.
