Tanguy, can you read 'man ls'?
If not, can you try in an uxterm?
  $ LC_ALL=fr_FR.UTF-8 uxterm
and in this uxterm, run
  $ man ls
If you can then read accented characters, this means that your
terminal is misconfigured.
