It's under "Device Drivers -> Staging drivers" (unless you use Linux 3.4
already).

This has still CONFIG_DRM_NOUVEAU=m.

Booting with nvidiafb.bpp=16 (or 24, or 32) should give you a higher
color depth with stock Debian kernels.
