Had I waited for my GNU/Hurd in Qemu, then I would have saved myself an embarrassment!
The correct linking is $ ln -s Linux p0f_2.0.8/mk/GNU It is only GNU/kFreeBSD that includes a forward slash in the output of `uname -s`.
