It would also be nice to say where the configuration file was!

Could you perhaps add the following to README.Debian and, if possible,
the man page?

The configuration file is at /etc/default/ntpdate.

You can have multiple servers separated by spaces:

 # servers to check
 NTPSERVERS="time.somewhere.net pool.ntp.org"
