While doing an apt-get upgrade, it would be nice if postfix package
send a message to mail.log with command "postlog" to notify that
the postfix process was restarted due to upgrade.

This would help monitoring the log messages better.

All postfix startup/shutdown operations are logged from within postfix
for a very long time.  Additionally, when running under systemd, it
logs service start/stop/restart events by its own.   I see no reason
to keep this bug report open anymore.  Sorry it took so much time..
