I haven't bothered with gmime versions since 2008. Just keep it current.
GMime 2.4.x is reportedly working with 3.1.x, but I wouldn't use
anything but GMime 2.6.x - later usually is indeed better, but I'd have
to check the gmime changelog before I could tell you why.

just FYI a quick grep on my server tells me this:

meaning I've been running 3.0.2 -> 3.1.4 with gmime 2.4.32 without any problems (except the spin-lock in imapd and the imap sort thing both unrelated to gmime)
