Can I write /etc/fstab more generally so that [1.7], like [1.5], can be made to run off a portable drive without needing to specify (or even know) the driveletter allocated by the host to the portable drive?
I do the exact same thing, much to the consternation of others on the list. I ended up with a batch file to start Cygwin that figures out which drive its running on and then it writes out a custom /etc/fstab based on that drive letter. It's certainly not the most elegant way of doing things, but it works.
