[ZEPPELIN-6733] Align Kubernetes mock server with OkHttp 4
The Assistant server adds OkHttp 4, which reaches plugin tests through the
provided server dependency. Fabric8 still resolves MockWebServer 3.12 and fails
during initialization. Select the matching MockWebServer version for Kubernetes
launcher tests.
