I see the previous version of the website has been restored, using asf-site.
The current site builds OK for me, but I think the issues were with the updated
site source which is no longer available AFAICT.
I used the following to test the site:
cd /tmp
git clone [https://github.com/apache/wicket-site]
cd wicket-site
bundle config set path .gems # set a local path for gems
bundle exec jekyll serve
I'm sorry, but I cannot help any further with fixing the build.
